Fish & Seafood Heritage Salmon Loaf

Recipe Ingredients
2/3 cup Carnation nonfat dry milk powder
3/4 cup water
1 (14 3/4 ounce) can pink salmon, drained and flaked
3/4 cup finely chopped celery
1/4 cup chopped onion
28 small fat free saltine crackers, made into fine crumbs
1 (10 3/4 ounce) can Healthy Request Cream of Celery Soup
1 teaspoon dried parsley flakes





Recipe Directions
Preheat oven to 350 degrees. Spray a 9 x 5 inch load pan with butter-flavored cooking spray. In a large bowl, combine dry milk powder and water. Add salmon, celery, onion, crackers, celery soup, and parsley
flakes. Mix well to combine. Let set for 2 to 3 minutes for crackers to absorb moisture. Pat mixutre into prepared loaf pan. Bake for 40 to 45 minutes. Place loaf pan on a wire rack and let set 5 minutes. Cut into 6 servings.

Each serving equals:

Heathly Exchanges: 2 1/3 protein, 2/3 bread, 1/3 skim milk, 1/3 vegetable, 1/4 slider, 10 optional calories

Nutritonal Values: 179 calories, 3 gm fat, 18 gm protein, 20 grm carbohydrate, 766 mg sodium, 196 mg calcium, 0 gm fiber

Diabetic: 2 meat, 1 1/2 starch
